Tasting Note
Concentrated cassis, blackberry and black cherry with graphite, sandalwood, cigar box and dark cocoa. Vibrant acidity, fine-grained tannins and a long, persistent, mineral-tinged finish.

Grilled ribeye, roast lamb, braised short ribs, beef bourguignon; Asian: Korean BBQ (galbi), Cantonese roasted duck, Szechuan-style braised beef or hoisin-glazed pork.

Production Method
Hand-harvested (night), sorted, native/selected yeast fermentation with extended maceration; barrel-aged in French oak (heavy new-oak influence), bottled unfined. Aged ~18–20 months.
