Tasting Note
Opulent black-currant, cassis and ripe dark cherry framed by raspberry, mocha, cigar box, licorice and graphite. Silky yet powerful, with polished tannins, savory earth/garrigue notes and a long, multilayered finish.

Food Pairing
Western: braised beef short ribs, grilled lamb chops with wild mushrooms, aged steak, beef bourguignon. Asian: Korean BBQ (galbi), char siu or soy‑glazed beef, Peking duck, mushroom-rich Chinese braises.

Production Method
Hand-harvested; fermented in small stainless tanks (indigenous yeasts), 5–6 day cold soak, ~32 day maceration; spontaneous malolactic in barrel; aged ~20 months in new French oak.
