Tasting Note
Concentrated mountain Chardonnay: grapefruit, white peach, lemon tart, beeswax, toasted almond and honeyed brioche. Full, creamy texture with bright tension and a very long, layered finish.
Food Pairing
Western: butter-poached lobster, roasted chicken, mushroom risotto, creamy tortellini. Asian: miso-glazed black cod, seared scallops with soy-butter, richer sushi (toro/hamachi), mild coconut Thai curry.
Production Method
Barrel‑fermented and aged on the lees in French oak (high % new oak) with bâtonnage; natural-yeast fermentation and bottled unfined/unfiltered. (barrel selection produced only in best vintages).
