Tasting Note
Concentrated dark cherry and blackcurrant with violet and tobacco aromas, chalky limestone minerality, white pepper and cocoa. Silky yet substantial tannins, vibrant acidity and a long saline finish.

Food Pairing
Western: roast lamb, braised short ribs, beef tenderloin, mushroom risotto, aged Comté. Asian: Peking duck, char siu, Korean BBQ short ribs, beef rendang, soy-braised beef.

Production Method
Whole-berry gravity vatting and parcel fermentation in concrete vats; aged 16–20 months in French oak barrels (≈50% new); minimal fining/filtration.
