Tasting Note
Citrus (lemon, lime, white grapefruit) with white peach, quince and lemongrass, wet stone and saline minerality; creamy texture, bright incisive acidity and a long, mineral finish.

Food Pairing
Western: oysters, scallops, lobster, grilled/roasted white fish, roasted chicken, goat and creamy cheeses. Asian: sashimi/sushi, miso-glazed fish, Cantonese steamed fish, light seafood Thai dishes.

Production Method
Hand-harvested (Sept 7–13), low-yield selection; fermented and aged in oak barrels, part bottled in magnums for long ageing.

Produced by Château Margaux (First Growth). Pavillon Blanc brand since 1920 from an 11-ha old-vine Sauvignon Blanc plot; very limited production and modern cellars by Norman Foster.
