Tasting Note
Very pale straw with lime hues. Flinty, mineral nose of lemon sherbet, white peach, cashew and subtle struck-flint. Precise, mouth-filling palate of nectarine and citrus, fine oak integration and saline, racy acidity with a long, crystalline finish.
Food Pairing
Western: oysters, lobster, roast chicken with beurre blanc, seared scallops, creamy pasta, soft cheeses. Asian: miso-glazed black cod, sushi/sashimi (salmon), tempura prawns, yuzu or citrus-marinated fish, mild Thai green curry with seafood.
Production Method
Whole-bunch pressing; barrel fermentation (including wild yeasts), malolactic fermentation and lees work; matured eight months in French oak barriques (60% new); bottled under screwcap.
