Tasting Note
Citrus and white peach with lemon curd, flinty minerality, toasted hazelnut and subtle French oak. Vibrant acidity, creamy mid-palate and precise, saline-driven, very long finish.

Seared scallops, lobster/beurre blanc, roast chicken, creamy pasta (Western); sushi/sashimi, tempura prawns, miso-glazed cod, steamed crab with ginger/scallion (Asian).

Production Method
Blend of cool-climate sites; barrel-fermented and matured ~8 months in French oak (≈44% new), lees aging and bottled under screwcap.
