Tasting Note

Bright gold bubbles; saline, stony minerality with notes of dried herbs, seaweed, lemon zest, malt biscuit and almond. High acidity, precise, and focused with a long, crystalline, saline finish.


Food Pairing

Oysters and shellfish, grilled fish, roasted chicken, aged cheeses and Spanish tapas; sushi, sashimi, tempura, grilled eel (unagi), Korean seafood pancakes.


Production Method

Biodynamic viticulture; hand-harvested, whole-bunch pressing, native-yeast fermentation in steel/concrete, bottled for second fermentation and ~100 months on lees; minimal intervention.

Pepe Raventós' personal 'Vins Pepe Raventós' project separate from the family estate. Made from a 1.9ha Clos del Serral of old vines planted c.1954; tiny, artisanal production.
