Tasting Note

Bright, mineral-driven sparkling with baked apple, quince, citrus zest, saline and toasted brioche notes; creamy mousse, vibrant acidity and a long savory, saline finish.

Oysters and shellfish, sushi/sashimi and tempura, ceviche, grilled white fish, roasted chicken, mushroom risotto, paella, lightly spiced Asian dishes (e.g., Thai/Chinese stir-fry).


Production Method

Hand-harvested; whole-bunch pressed; native-yeast fermentation in stainless steel and cement; bottled for extended in-bottle aging with ~100 months on lees before disgorgement.
