Tasting Note
Delicate salmon-pink with aromas of red berries, peony and pink grapefruit; brioche and toasted pastry notes. Palate delivers raspberry, pomegranate and citrus, creamy mousse, pronounced minerality and a long, silky finish.

Food Pairing
Western: roast pigeon or duck breast, foie gras, smoked salmon, lobster, berry tarts. Asian: sushi and sashimi (tuna/salmon), Peking duck, char siu, Thai prawn curry, mango sticky rice.

Production Method
Méthode traditionnelle (secondary fermentation in bottle); blended base wines with a small addition of red Pinot Noir for colour; aged on lees c.6+ years; dosage ~8–9 g/L.
