Tasting Note
Citrus, green mango, white pear and blossom with chalky minerality, saline lift and gentle anise bitterness. Medium–full, textured palate with bright acidity and a long, mouthwatering finish.

Production Method
Gentle pressing; fermentation in demi-muids, large foudres and wooden vats; extended sur-lie élevage with bâtonnage for ~18–22 months; ~10% new oak.
