Tasting Note
Ripe red and black cherry, raspberry, dried rose petal, forest floor and gentle baking spice. Firm, structured tannins with bright acidity and a long, savory finish showing earth and subtle oak.

Western: roast beef, boeuf bourguignon, duck breast, lamb, game (venison). Asian: Peking duck, char siu, Korean bulgogi, miso-glazed aubergine, shiitake mushroom stir-fries, richer ramen with braised pork.

Production Method
Hand-harvested Pinot Noir; gentle cold soak followed by ferment in temperature-controlled vats with partial whole-cluster use depending on vintage; aged 12–18 months in French oak (≈30% new).
