Tasting Note
Austere then explosive: preserved lemon, lime blossom, hazelnut, marzipan and pear with butterscotch and honeyed notes. Intense limestone-driven minerality, silky texture and a long, luxurious finish.

Production Method
Direct pneumatic pressing; fermentation and 12 months aging in 500L French oak (≈2/3 new), followed by extended élevage in stainless steel; minimal sulphur and gentle racking.
