Tasting Note
Perfumed blackcurrant, black cherry and blueberry with cedar, graphite and cigar-box notes; refined, velvety yet firm tannins, precise acidity and a persistent mineral finish.

Western: grilled/roast beef, leg of lamb, game, duck, mushroom risotto, aged hard cheeses. Asian: Peking duck, Korean BBQ (bulgogi/galbi), char siu, soy‑braised short ribs, rich Szechuan beef.

Production Method
Hand‑harvested; fermented in temperature‑controlled vats (and some large wooden vats); malolactic in barrel; aged ~20 months in 80% new French oak.
