Tasting Note
Deep garnet with aromas of cassis, black cherry, pencil lead, violet, cigar box and cedar. Full-bodied and concentrated with ripe, fine-grained tannins, balanced acidity and a long, spicy, mineral finish.

Western: roast beef, leg of lamb, venison, filet mignon, aged hard cheeses. Asian: Peking duck, Cantonese roast pork (char siu), Korean BBQ (galbi/bulgogi), Sichuan-style beef, Indonesian beef rendang.
Production Method
Hand-harvested; fermented in temperature-controlled tanks with malolactic fermentation; aged 18 months in French oak barrels (≈80% new); grand vin from about 50% of the harvest.
