Tasting Note
Concentrated blackcurrant, black cherry and cassis with graphite, cedar, cigar box and dark chocolate notes; silky texture, fine-grained tannins, vibrant acidity and a long mineral finish.

Food Pairing
Western: roast lamb, prime rib, beef stews, aged hard cheeses. Asian: Peking duck, Korean BBQ (bulgogi), Cantonese char siu, braised Sichuan or soy-braised beef.

Production Method
Hand-harvested, traditional fermentation with extended maceration; matured ~18 months in French oak barrels (about 80% new).
