Tasting Note
Concentrated blackcurrant and black cherry with cedar, pencil lead, violet and tobacco. Silky yet powerful, with fine-grained, firm tannins, bright acidity and a long, perfumed finish.

Food Pairing
Western: roast lamb, grilled ribeye, braised short ribs, beef bourguignon, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), Szechuan-style beef, miso-glazed eggplant.

Production Method
Hand-harvested; fermented in stainless-steel/concrete vats with temperature control; blended (79% Cabernet, 21% Merlot) and aged 18 months in French oak barrels (≈80% new).
