Tasting Note
Concentrated blackcurrant and blackberry, graphite, tobacco, cedar and pencil-shaving notes; full-bodied with fine-grained, refined tannins, minerality and a long, layered finish.

Food Pairing
Western: roast beef, rack of lamb, duck confit, aged Comté or Gruyère, mushroom risotto. Asian: Peking duck, Korean bulgogi or galbi, Cantonese roasted pork (char siu), mildly spiced Szechuan beef with reduced chili.

Production Method
Hand-harvested (Sept 16–Oct 8, 2019); fermented in controlled vats and matured ~18 months in ~60% new French oak.
