Tasting Note
Elegant medium-to-full Pinot Noir with ripe black cherry, blackberry, blueberry and violet florals, loamy mineral notes, soft powdery tannins, silky texture, balanced acidity and a dusty, lingering finish.
Food Pairing
Western: saddle or roast lamb with thyme, filet of beef (Charolais) in brioche, duck breast, mushroom risotto, Brie/Reblochon/Comté. Asian: Peking duck, char siu or soy-glazed pork, mushroom or tofu stir-fry, teriyaki salmon, mild mushroom curry.
Production Method
Hand-harvested and sorted; destemmed and fermented in vats with regular punchdowns. Vinification largely without sulfur since 2016; transferred to barrels mid‑fermentation and aged ~12 months in oak. Small SO2 added before bottling; occasional light filtration.

Domaine Pierrick Bouley — sixth-generation Volnay estate (~9 ha across 41 parcels, average vine age ~50 years). Pierrick took over in 2014 and is transitioning to organic/biodynamic practices; small-production, terroir-focused wines.
