Tasting Note
Deep cassis and black plum with violet, graphite and tobacco notes; earthy/mineral core, polished grainy tannins, bright freshness and a long saline, cedar-tinged finish.

Food Pairing
Western: roast lamb, châteaubriand, ribeye, beef stew, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ beef, soy-braised short ribs, beef rendang, miso-glazed eggplant.

Production Method
Biodynamic viticulture; hand-harvested; fermented mainly in concrete/amphora and matured ~50% new French oak, 35% amphora, 15% used barrels.
