Awards/Ratings
Burghound 92 (reported). Positive coverage from Bill Nanson (The Burgundy Report) and multiple retailer tasting notes (Kent Street, Flatiron, Kensington) noting native yeast fermentation, 350L barrels and restrained new oak
Tasting Note
Citrus and orchard fruit with acacia blossom, hazelnut and wet stone. Bright acidity, saline minerality and a textured, slightly creamy mid-palate leading to a focused, linear, medium-long finish.
Food Pairing
Western: roast chicken, buttered lobster, mushroom risotto, aged Comté, creamy pasta. Asian: miso‑glazed cod, seared scallops, sushi/sashimi, tempura prawns, soy‑glazed salmon, pork‑belly buns.
Production Method
Whole-cluster pressing, native-yeast fermentation in 350L demi-muids, aged in large-format oak (c.15–20% new), minimal batonnage; bottled unfined and unfiltered.
