Tasting Note
Opaque black-purple; concentrated blackcurrant, blackberry, violets, pencil lead, cocoa and crushed rock. Intense, richly textured, with powerful yet polished tannins and a long, mineral-driven finish.

Grilled ribeye or prime rib, roast lamb, braised short ribs, aged cheddar, Peking duck, Cantonese char siu, Korean BBQ bulgogi, savory Sichuan dishes (maps well with rich, umami-forward Asian dishes).

Production Method
Small-lot fermentation with careful extraction; aged in French oak barrels (estimate 18–20 months, predominantly new) to build structure and oak complexity before bottling.
