Tasting Note
Red cherry and strawberry, blood orange, rose petal, dried herbs, licorice and clove; bright, tensile acidity, finely grained tannins and a mineral, persistent finish.

Western: roasted lamb, braised beef, porcini risotto, truffle pasta, aged salumi and hard cheeses. Asian: Peking duck, hoisin or soy-glazed pork (char siu), Korean bulgogi, mushroom hot-pot or stir-fry (umami-rich dishes).

Production Method
Organic/biodynamic farming; hand-harvested; indigenous-yeast fermentation (~10 days), long submerged-cap maceration (~60–70 days); aged in large neutral oak foudres/botti (extended aging).
