Tasting Note
Pale gold with green highlights; white flowers, lemon zest, green apple, toasted almond and chalky minerality. Taut mousse, electric acidity, razor precision and a long saline, mineral finish.

Food Pairing
Western: oysters, caviar, lobster, sole meunière, truffled eggs, aged Comté or triple‑cream cheeses. Asian: sushi/sashimi, tempura, steamed fish with ginger & scallion, dim sum (har gow), light Thai seafood dishes.

Production Method
Traditional method (méthode champenoise); 100% Chardonnay blanc de blancs from Le Mesnil; stainless-steel fermentation, extended lees aging (~10+ years), disgorged before release.

Vineyard Info
Founded by Eugène‑Aimé Salon (early 20th c.); Salon makes a single-vineyard blanc de blancs from Le Mesnil-sur-Oger only in exceptional vintages. Now part of Laurent‑Perrier; very limited, highly allocated production.
