Tasting Note
Pure, crystalline blanc de blancs: lemon and green apple, white flowers, toasted brioche, ginger and chalky minerality. Fine mousse, focused acidity and a long saline, mineral finish.

Food Pairing
Oysters, scallops, lobster, ceviche, sushi/sashimi, tempura, miso-glazed fish, roast chicken, creamy pasta, aged Comté or triple-cream cheeses, and caviar.

Production Method
Traditional method (méthode champenoise). Single-cru, single-variety harvest; primary fermentation in stainless steel, extended lees ageing (10+ years), low dosage (around 3–5 g/L).

Vineyard Info
Founded by Eugène-Aimé Salon in the early 20th century. Salon produces a single vintage blanc de blancs from Le Mesnil-sur-Oger; tiny, collectible production and part of the Laurent-Perrier family.
