Tasting Note
Concentrated cassis, blackberry and blueberry with graphite, violet, black truffle and wet-earth notes; full-bodied, tightly structured with refined tannins and an exceptionally long, savory finish.

Food Pairing
Western: grilled ribeye, roast lamb, beef Wellington, aged cheddar. Asian: Peking duck, char siu, Korean BBQ short ribs, spicy Sichuan beef or braised beef.

Production Method
Small-lot fermentations with cold soaks and extended maceration; aged ~18–20 months in French oak (c.60–65% new); minimal filtration.
