Tasting Note
Concentrated blackcurrant, blackberry and cassis with violets, graphite, cedar, tobacco and sweet spice. Silky, refined tannins, vibrant acidity and a long, mineral-tinged finish.

Food Pairing
Western: grilled ribeye, roast lamb, mushroom risotto, aged cheddar. Asian: Korean BBQ (bulgogi/galbi), Peking duck, Cantonese char siu, miso-glazed aubergine with sesame, hearty Sichuan beef.

Production Method
Hand-harvested, small-lot fermentations with extended maceration; aged ~18–22 months in French oak (approx. 60–70% new). Minimal filtration; modern cellar techniques for precision.
