Tasting Note
Concentrated blackcurrant and blueberry with violets, forest floor, graphite and spice. Full-bodied, pure and elegant with fresh minerality, silky layered tannins and a long, refined finish.

Food Pairing
Grilled ribeye, roasted lamb, mushroom risotto, aged cheddar; Peking duck, char siu, Korean BBQ (galbi), spicy Sichuan beef.

Production Method
Hand-harvested, small-lot fermentations (open-top vats/punchdowns), aged ~18–20 months in new French oak, minimal filtration before bottling.
