Tasting Note
Concentrated black and blue fruits (spiced blueberry, black cherry, preserved plum) with baker’s chocolate, lavender, mint and savory underbrush. Full-bodied, layered, firm grainy tannins and an epic, spicy, floral finish.
Food Pairing
Western: roast lamb, braised short ribs, aged cheddar, mushroom risotto. Asian: Peking duck, Korean BBQ, char siu, braised Sichuan beef, grilled wagyu.
Production Method
Estate fruit fermented in small tanks, matured ~20–22 months in new French oak barrels; parcels blended to a Bordeaux-style second-label.
