Tasting Note
Perfumed dark-fruit core of black cherry, blackberry and plum with lavender, violets, graphite and mocha. Medium–full body, very fine-grained firm tannins, bright freshness and a long, perfumed finish.
Food Pairing
Western: grilled ribeye, roasted lamb, mushroom risotto, aged cheeses (Gouda, Comté). Asian: Peking duck, char siu (Chinese BBQ pork), Korean BBQ (galbi), spicy Sichuan beef, miso-glazed eggplant.
Production Method
Hand-harvested, small-lot fermentations with extended maceration; aged ~18–24 months in French oak (high % new); minimal fining/filtration.
