Tasting Note
Cassis and dark berries, violets, truffle, tobacco, damp earth and candied orange peel; ultra-fine tannins, medium–full body, fresh acidity and a long, polished finish.

Western: grilled or roasted red meats (ribeye, lamb), beef ragu, game, aged hard cheeses. Asian: Korean BBQ, char siu, hoisin/braised short ribs, Sichuan-style beef, miso-glazed dishes, grilled wagyu.

Production Method
Grapes fermented in stainless-steel and concrete vats; matured ~22 months in mainly new oak barriques and Stockinger foudres.
