Tasting Note
Deep ruby with violet hues. Aromas of strawberries, cassis, rose petals, clove and cocoa. Palate shows red and black fruit, dark chocolate, juicy acidity and fine-grained tannins, elegant and poised with long, mineral-tinged finish.

Food Pairing
Western: grilled ribeye, roast lamb, game, aged cheeses. Asian: Korean BBQ (bulgogi), miso-glazed fish, Cantonese roast pork, spicy Sichuan beef.

Production Method
Biodynamically farmed; mostly stainless-steel fermentation, 22 months ageing (90% French oak, c.70% new) and 10% in foudres; bottled February 2023.
