Tasting Note
Concentrated blackcurrant, blueberry and plum with licorice, cedar and tobacco. Silky, dense palate with ripe tannins, bright acidity and a long, mineral finish (balanced, elegant, perfumed).

Grilled ribeye or roast lamb, aged hard cheeses (Manchego, Pecorino); Asian: Korean BBQ (bulgogi), Cantonese roast pork / char siu, Peking duck, spicy Sichuan beef.
Production Method
Biodynamically tended vineyards; parcel fermentations, aged ~22 months in French oak (barriques and Stockinger foudres).
