Tasting Note
Complex red and black fruit (cherry, raspberry, cassis) with violets, herbal/dill and spice; fresh, juicy palate, balsamic undertones, silky fine-grained tannins and a long, elegant finish.

Grilled steak, roast lamb, braised short ribs, beef stews, aged cheeses; Korean BBQ (bulgogi), Peking duck, char siu, Sichuan-style beef, mushroom hot pot.
Production Method
Grapes harvested early March; fermented mostly in stainless steel (10% in concrete eggs); aged ~22 months in French barriques (78% new) and large Stockinger barrels; biodynamic practices in vineyard.
