Tasting Note
Perfumed red and black fruits (strawberry, cassis), rose and garrigue, with clove, cocoa and cigar-box spice; juicy acidity, ultra-fine tannins and a long, mineral-driven finish.

Food Pairing
Western: grilled ribeye, roast lamb, braised short ribs, aged hard cheeses. Asian: Korean BBQ (bulgogi), Peking duck, Cantonese roast pork (char siu), spicy Sichuan beef or mushroom hotpot.

Production Method
Bordeaux-style blend fermented mainly in stainless steel (10% in foudres), matured ~22 months (90% French oak, ~70% new), from biodynamically farmed vineyards.
