Tasting Note
Medium-bodied, elegant red with blackcurrant, plum, dried cherry, subtle tobacco, orange peel and sweet spice notes; fresh acidity, soft plush texture and a long, mineral finish.

Food Pairing
Western: grilled lamb, roast beef, ribeye/steak, mature hard cheeses; Asian: Korean BBQ (bulgogi), Cantonese roast duck/char siu, Sichuan beef, teriyaki beef.

Production Method
Fermented mainly in stainless steel with ~10% in concrete; matured 22 months in French oak (80% new) and 10% in Stockinger vats; bottled Feb 2021 (c.100,000 bottles).
