Tasting Note
Bright red fruit (raspberry, cherry) with dark currant hints, mineral/stony core, subtle spice and cocoa-menthol notes; silky texture, fine tannins and a saline, persistent finish.

Food Pairing
Western: roast duck, lamb, pork rillettes, mushroom risotto, soft cheeses. Asian: Peking or Cantonese roast duck, char siu, mushroom hot pot, soy/ginger glazed salmon.

Production Method
100% destemmed; long maceration (c.22–30 days); indigenous yeast fermentation; 18 months élevage in oak (c.20–25% new); bottled without fining and minimal filtration.
