Tasting Note
Perfumed red cherry and plum with violet, lavender and forest-floor notes; saline minerality, warm spice and concentrated mid‑palate; supple powdery tannins, lively acidity and long saline finish.

Food Pairing
Western: roast duck, beef bourguignon, lamb, mushroom risotto. Asian: Peking duck, char siu, miso-glazed salmon or umami-rich Japanese mushroom dishes, Korean BBQ (moderate spice).

Production Method
Organic/sustainable viticulture; 100% de-stemmed, cold maceration and indigenous-yeast fermentation; aged ~18 months in oak (c.75% new); minimal filtration; SO2 added after malolactic.
