Tasting Note
Perfumed red and black cherry, rose and violet with sous-bois, spice and mineral lift; concentrated core, silky yet firm tannins, bright acidity and a very long, refined finish.

Western: roast duck, beef tenderloin, lamb, mushroom risotto. Asian: Peking duck, char siu, soy-miso glazed salmon, shiitake mushroom hot pot.
Production Method
Hand-harvested, rigorous sorting and partial destemming; fermentation in small open-top vats, malolactic completed in barrel; aged in French oak (2015: two new, one one-year-old barrel).
