Tasting Note
Perfumed black cherry and raspberry with violet, sweet spice and wet-stone minerality. Medium–full-bodied, silky texture, lively acidity, fine-grained tannins and a saline, persistent finish.
Food Pairing
Western: roast duck, duck breast, mushroom risotto, roast lamb, beef bourguignon. Asian: Peking duck, char siu pork, miso-glazed fish, mushroom hotpot, soy‑braised pork belly.
Production Method
Fully destemmed fruit, cold maceration, indigenous-yeast fermentation (10–22 days), full malolactic; aged 15–18 months in oak (c.50% new reported for this parcel). Minimal filtration, bottled unfined.
Vineyard Info
Domaine family-owned since 1930s (Sylvain, now Sébastien Cathiard). En Orveaux is a tiny ~0.29–0.30 ha parcel of old vines (1950s), farmed organically and prized for its mineral, near-grand-cru character.
