Tasting Note
Pure, intense red and black cherry with blackberry, licorice, spice, floral peony and crushed-stone minerality; fleshy, concentrated, firm tannins and bright acidity finishing long and chiselled.

Food Pairing
Western: roast duck, beef short rib, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, miso-glazed salmon, shiitake and soy-based dishes.

Production Method
Hand-harvested Pinot Noir; fermented and matured in oak (c.62% new); slightly later malolactic fermentation noted for 2017, traditional Burgundian élevage.
