Tasting Note
Pure black cherry, blackcurrant and boysenberry with crushed stone, orange rind, sous-bois and a peppery topnote; ripe, textured palate, fine energetic tannins, pronounced minerality and a long, blood‑orange-tinged finish.
Food Pairing
Western: roast duck, beef bourguignon, lamb chops, mushroom risotto. Asian: Peking duck, char siu or hoisin-glazed pork, miso-glazed black cod, beef bulgogi or wagyu shabu-shabu.
Production Method
Estate-grown Pinot Noir; ~50% whole-bunch fermentation, matured ~12–18 months in ~75% new oak; traditional Burgundian vinification and estate bottling.
