Tasting Note
Perfumed black cherry, raspberry and blackberry with violet florals, forest floor, warm spices and stony minerality. Concentrated yet elegant, velvety tannins and bright acidity lead to a long, savory finish.

Food Pairing
Western: roast duck, beef bourguignon, lamb, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, miso‑glazed black cod, soy‑braised pork, grilled shiitake with sesame.

Production Method
Hand‑harvested fruit; partial whole‑cluster fermentation in open wooden vats; malolactic in barrel; aged in French oak (high % new for Clos St‑Jacques); bottled unfined and usually unfiltered.

Family domaine (7.8 ha) run by Sylvie Esmonin since the 1990s. She owns c.1.6–1.7 ha of Clos Saint‑Jacques; works organic/biodynamic practices with many old‑vine parcels.
