Tasting Note
Bright, mineral-driven blanc de blancs with candied lemon, green apple, brioche, gingerbread and meringue. Chalky, saline palate, ripe orchard fruit, toasted pastry and anise notes; long, precise finish.

Oysters, lobster, scallops, smoked salmon, caviar; shellfish pasta or fish en papillote (Western). Sushi, sashimi, tempura, Cantonese steamed fish, light Thai seafood dishes (Asian).
Production Method
Méthode traditionnelle (Champenoise). 100% first-press cuvée; ~5% fermented/aged 4 months in new oak; aged ~9–10 years on lees in Saint‑Nicaise chalk cellars; dosage ~9–10 g/L.

Maison Taittinger, founded 1932 in Reims. Comtes is the house’s prestige vintage Blanc de Blancs, produced only in exceptional years from top Côte des Blancs Grand Cru sites.
