Tasting Note
Evolved golden Chardonnay with baked apple, dried apricot, toasted hazelnut, buttered oak and honeyed notes. Medium acidity, creamy texture and a subtly nutty, savory finish (aged character).

Food Pairing
Western: roast chicken, lobster bisque, creamy pasta, aged Comté. Asian: miso-glazed cod, sushi (fatty tuna), Chinese roast duck, mild Thai coconut curry.

Production Method
Hand-harvested Chardonnay; fermented and aged in French oak barrels with partial malolactic influence and bottle aging to develop tertiary character.
