Tasting Note
Perfumed dark berries (blackberry, elderberry), graphite/mineral slate, violet florals, peppery spice and subtle oak. Vivid acidity, fine-grained yet gripping tannins and a long, spicy finish.

Food Pairing
Western: roast lamb, venison, grilled steak, roasted root vegetables, manchego and aged cheeses. Asian: Korean BBQ (galbi), char siu or hoisin pork, Sichuan pepper beef, Chinese red-braised beef, yakitori/teriyaki-glazed grilled meats.

Production Method
Hand-harvested; whole-cluster native fermentations with short maceration (~2 weeks); pressed and aged 12–24 months in large Stockinger foudres and concrete tanks. Organic/biodynamic vineyard practices; minimal new oak.
