Tasting Note
Dense blue-black fruit, cassis and blackberry with violet, olive paste, white pepper, smoked meat and graphite. Youthful, mineral-driven, powerful palate with polished yet firm tannins and a very long, floral-tinged finish.

Western: grilled ribeye, braised beef stew, roast lamb, cassoulet; Asian: Korean BBQ (bulgogi), Chinese red-braised beef, Sichuan pepper beef, roasted duck with hoisin, mushroom hotpot.

Production Method
Hand-harvested Syrah; whole-bunch/indigenous yeast fermentation, long maceration; aged 18–24 months in seasoned oak and foudres; minimal SO2; bottled unfined and unfiltered.

Domaine Thierry Allemand (c.5 ha) revived abandoned Cornas sites since the 1980s; famed for low yields, organic practices and artisan, low-intervention winemaking producing benchmark Cornas.
