Tasting Note
Medium-plus Pinot Noir: black cherry, raspberry, bramble and blackberry with savory spice, warm earth and iron-like minerality. Fine, ripe tannins and lively acidity give a persistent, savory finish.

Food Pairing
Roasted or braised beef, lamb, duck (including Peking duck), mushroom risotto, aged cheeses; Asian pairings: teriyaki or miso-glazed duck, bulgogi, soy-sauce braised pork, shiitake/umami dishes.

Production Method
Hand-harvested; fermentations in temperature-controlled vats (18–21 days) with careful maceration; aged 14–18 months in oak (c.25–35% new barrels).
