Tasting Note
Evolved red: cherries and raspberries with cedar, tobacco, leather, truffle and baking spice. Vibrant acidity, silky mature tannins, medium body and a long, mineral-tinged finish

Western: roasted lamb, grilled beef, braised short ribs, stews, aged Manchego and cured meats. Asian: Peking duck, char siu, Korean BBQ, hoisin-glazed pork, mushroom hot pot and rich soy-braised dishes.

Production Method
Fermented in large old oak vats with indigenous yeasts; aged ~6–8 years in predominantly used American oak barrels, bottled unfiltered after extended bottle ageing; traditional minimal-intervention techniques.
