Tasting Note
Inky, concentrated Shiraz with blackberries, black cherry, satsuma plum, dark chocolate, tar and warm spice. Plush, velvety texture with finely grained yet powerful tannins, balanced acidity and a long, spice‑driven finish.

Food Pairing
Grilled ribeye, porterhouse or tomahawk steak; braised lamb shank, osso buco, beef short ribs; hearty stews and aged hard cheeses. Asian pairings: Korean galbi, Chinese red-braised beef, Sichuan pepper beef, Cantonese char siu and Peking duck.

Production Method
Hand-harvested old‑vine Shiraz (six parcels), small addition of Viognier prior to bottling; open-top ferments, extended maturation (~30 months) in French oak barriques (≈50% new); bottled unfiltered.
